Smoked Salmon Recipe
1 Cup White Sugar
1 Cup brown Sugar
1/4 Cup Salt
1/2 Spice Container of Cayenne Pepper
Sounds super spicy but it actually has very sweet flavor.
Cut fish up into chunks. I like to skin and de bone mine. U can leave skin on also. coat the fish Liberally. it will create its own juice. Stir it couple times a day after juice is formed. Let soak for 24 hours minimum. I like 36 to 48. Rinse thoroughly pat dry with towel. Put in on your racks and leave on the counter to air dry until nice and sticky. Fan helps speed things up. I smoke mine at 120 for 6 to 8 hours depending upon how thick it is.
